    The history of cakes goes back around 3,000 years . In ancient Rome, Greece and Eygpt cakes were a like a low rise sweet bread, honey and fruits were the sweetening and flavoring agents. . The word cake is believed to date back about 1000 years and is said to have derived from the old Swedish (Norse) word kakaan . The first modern cakes with a round shape, sugar as a sweetening agent and icing were produced in europe starting in the 1650's . The cakes were baked in round hoops made of metal or wood and placed on flat trays. The first icing was made of boiled sugar and egg whites. It was poured over the cake and dried to a hard "ice like" coating. In the 1800s technological improvements made it possible to produce increasingly elaborate and larger cakes. The chemical raising agent bicarbonate of soda, introduced in the 1840's, followed by baking powder ( a dry mixture of bicarbonate of soda with a mild acid), replaced yeast, providing a greater leavening power with less effort. Another technology breakthrough was more accuate temperature controlled ovens.
Around 1,000 years ago the tradition of the birthday cake began in Germany. Cake batter was made into the shape of the baby Jesus to celebrate  his birthday. As time passed this tradition was modified and the cake made to celebrate the birthday of a child
 
 Wedding Cake History
  The wedding cake has been part of the marriage ceremony for over 2,000 years. Durring ancient Roman wedding ceremonies the groom would take a bite of a small plain bread cake and then he would break the rest over his bride's head. This was taken as a sign of good fortune and a blessing for long life and many children. The guests would try and obtain a crumb for themselves as they too believed they would then share in the good fortune and future prosperity of the couple. It was only the children born to the couple whose marriage had been celebrated this way, that could qualify for high office in Roman culture. Not only did the cake give good fortune to the couple, it insured a bright future for their as yet unborn children.
 
  Around 1,000 years ago in Europe there was a custom of stacking small plain cakes in a large pile in front of the newlyweds. Stacked as high as possible the idea was to to make it difficult for the newlyweds to kiss one another over the top. If the bride and groom were able to kiss over the tall stack, it was thought to symbolize a lifetime of prosperity. In the 1660's during the reign of King Charles II, a French chef  visiting London  made an improvement on the cake piling ritual. The chef,  noticed the inconvenience of piling smaller cakes into a mound and conceived the idea of stacking them neatly and frosting them together. Multi-tiered cakes  then became very popular with Royalty. 
 
  Wedding cake traditions date from hundreds to thousands of years ago. Sleeping with a piece of wedding cake underneath one's pillow dates back as far as the 1600s and quite probably forms the basis for the tradition of giving slices of cake away to wedding guests. Legend has it that sleepers will dream of their future spouses if a piece of wedding cake is under their pillow. In the 1790s century this idea led to the tradition in which brides would pass tiny crumbs of wedding cake through their rings and then distribute them to guests who could, in turn, place them under the ir pillows. The wedding cake takes center stage in the traditional cake cutting ceremony, symbolically this is the first thing in life that the bride and groom perform together as husband and wife. After the cake cutting ceremony, the couple proceeded to feed one another from the first slice, this provides another lovely piece of symbolism, the mutual commitment of bride and groom to provide for one another.

HOW TO CHOOSE A CAKE
 
 Think about the occasion the cake is for ( Wedding Cake , Birthday Cake , Bachelorette Party Cake, Anniversary Cake , Quinceanera ( Quincenara ) Cake , ect) to focus on your own unique theme.
If you already have an idea and a picture of the cake you want you are heading in the right
direction, if you donít your imagination is the key to creating the perfect cake for any special
occasion. Use cake magazines and the Internet to help you design your cake. Start by drawing and
coloring your cake on paper. 
 
 Make an appointment with your baker for taste tests to choose your cake bread, fillings, frosting
flavors and to discuss your design ideas. The most important part of choosing a cake is let your
baker know how many guests are attending your event. This will give the baker an idea of how big
or small the cake has to be. You will now get an idea of the cost which is based on the size,
design difficulty and materials cost. After you get feedback from the baker you may want to refine
or change your design to meet your expectations and budget. Give your self enough time to rethink
your design. Your baker will be prepared and will have a more detailed picture of what is expected
when creating a special cake.Specialty Bakeries in Las Cruces , New Mexico generally require you to
put at least a 50% non-refundable down payment on your cake, to start preparing and gathering
materials needed for your cake. Payment usually will be excepted 14 days or more before the event to
pay for the labor, time and materials that needed.
 
 
 
The cost of your cake will be determined by these factors:
-Cost per slice
-How many guests are invited.
-Cost of cake samples      
-Decorations (flowers, toppers, figurines etc.)  
-Delivery and Set Up   
-Cake Cutting and Plating (do you have a volunteer or do you need to hire someone)  
-Rental fees (cake plateaus, cake stands ect.)
